KŌKULABO is an experimental izakaya concept in Bangkok. Studio Ryecroft’s role is beverage programming: creating a drinks offering that complements the food, matches the energy of the room, and can be executed cleanly night after night.The work here is about restraint and impact. We shape a programme that has enough intrigue to feel “KŌKULABO”, but not so much complexity that it slows service or creates fragile prep. That includes the structure of the list, the balance between cocktails, highballs, beer and sake, and a non-alcoholic offering that feels considered rather than apologetic.

We also focus on the practical operator layer: batching rules, dilution targets, ice formats, glass choices, spec writing, and training priorities so the team can hit consistency across different bartenders and different levels of experience. The aim is a drinks programme that feels integrated with the kitchen’s intent and gives guests a reason to return, even if they came in the first time for the food.
