For Pan Pacific Siam Bangkok, Studio Ryecroft’s scope is centred on the hotel’s destination bar, with the goal of creating a venue that can stand on its own in Bangkok, not simply serve the building. While the project is in development, our work is structured around setting the bar up properly before anyone worriesabout garnish lists. That means concept definition, guest promise, commercial positioning, and a programme plan that matches the future operating reality: staffing, dayparts, procurement, speed, and consistency.
From there we buildthe foundations: menu strategy (including a strong non-alcoholic offering at parity), standards for ice, batching, glassware and prep, and a service model that protects pace and warmth under pressure. We also support early collaboration with design and operations so the bar layout, back bar, refrigeration, storage, and wash-up capacity are correct from day one. The end goal is a bar with a strong identity, a clean operational blueprint, and a team that can deliver a serious standard immediately at opening.
